Maple Syrup

Maple Syrup is one of the most representative characteristic products of Canada. From Quebec City along the St. Lawrence River to the west to Niagara Falls, that is Canada’s famous “Maple Avenue.” There are tens of thousands of sugar factories in this 800 km long area, with an annual output of 32,000 tons of maple sugar, accounting for more than 75% of the world’s total production. Maple syrup is a natural product that contains no pigment or additives and comes from the sap of Acer Saccharum, or Acer saccharum. Maple syrup and its by-products are popular with consumers all over the world. Canada produces about 85% of the world’s maple syrup. The total production of Canadian maple syrup in 2003 was 34,000 tons, with farms valued at about $154 million. In Canada, more than 10,300 maple syrup producers collect maple sap from 35 million sap collections. Canada is a major exporter of maple syrup, exporting about 30,000 tons of maple syrup to more than 40 countries in 2003, with a total value of $147 million. The United States is Canada’s largest export market, accounting for 81 percent of its total exports, followed by Europe at 12 percent and Asia at 6 percent. Marketing is shifting from traditional markets to higher value-added markets, such as mixing with other products such as cereals and yoghurt. Since more than 60 per cent of maple syrup is exported as packaged finished products, the industry also contributes to Canadian value-added exports.

There are three kinds of used to make maple sugar maple: sugar maple, maple, red and black. These three maple sap sugar content as high as two 5, but the black maple is considered by some botanists as sugar maple subspecies. Because germination changes the taste of maple syrup, and red maple is the first of the three, the production period is shorter than the other two. A few other species of maple are also used to make maple sugar, such as the Manitoba, silver and large leaf maple. Birch, maple and palm trees are also used to make syrups, but the syrups are not usually called maple syrup.

During the growing season, maples gather starch. As the spring thaw sets in, enzymes convert the starch into sugar and mix it with the water absorbed by the roots, creating a slightly sweet taste. Maple sap mainly contains water about 97 percent, minerals, organic acids and maple enzyme precursor. In early March, maple sap begins to be produced and lasts for six to eight weeks. maple sap provides energy for the tree to grow. During the sugar phase of the tree, each tree can produce 35 to 50 liters of sap, which can produce 1 to 1.5 liters of maple syrup. It takes 40 liters of sap to produce an average liter of maple syrup. In traditional sugar maple forests, maple sap is still collected by manual shuttling between trees in large barrels. In modern sugar maple forests, piping systems have been used to collect sap, which is transported directly to maple sugar processing tents, where it is heated and vaporized.

Maple sugar is a very complicated process. Maple syrup is collected in March and April each year, and the right temperature is needed to collect maple sap. Maple sap can be produced only at 0℃ at night and above 5℃ in the daytime. The temperature at which maple syrup is boiled is generally kept above the boiling point of water at 4 ° C. The farmer drills a hole about five centimeters deep into the trunk of a sugar maple tree that is more than 40 years old. He plugs a tube into the tree and hangs a bucket that collects the sap. The sap drips slowly into the bucket. It takes about 30 to 45 liters of sap to make one liter of maple syrup. A maple tree about 25 cm in diameter, generally only one hole, so that it has the ability to rest, restore vitality. Old maples can usually bore three or four holes. According to the Federal government, maple syrup can be divided into three grades of color, transparency and taste, namely the highest grade — the thick original maple syrup, best eaten straight away; Level 2 – slightly less flavorful, amber in color; Grade 3 – Darkest color, suitable for food additives. Maple syrup is usually served directly on pancakes. Maple sugar also contains other volatile organic compounds, such as vanillin, acetoin and propyl aldehyde, which may be the source of its unique flavor. Maple sugar has about the same number of calories as sugar, but is a good source of manganese and zinc relative to sugar, at 0.44 and 0.55 milligrams per 13 grams of maple sugar. Maple sugar contains 10 times as much calcium as honey and only a tenth as much sodium. The scientists found that the natural phenol in maple sugar, a natural antioxidant, may have some effect on type 2 diabetes. A total of 34 new compounds were found in pure maple sugar in this study, and five phenols had never been found in nature before. A phenol, produced when maple sugar is boiled and heated, is named Quebec phenol. Maple syrup contains a considerable amount of zinc, iron and vitamin B1 and other complex Vitamin B components. In addition, 50 ml of maple syrup contains 4 percent of the recommended daily intake of calcium, 3 percent of potassium, and 2 percent of magnesium and riboflavin.

Ice Wine in Canada

Canadian ice wine is sweet, fragrant and elegant. It is known as the nectar given by God to human beings in winter. Ice wine is the most representative wine in Canada. The status of ice wine in Canada’s wine industry is as prominent as totem, and Canada has become a synonym of ice wine in the global wine market. What makes Canadian ice wine so unique?

(a) Timing:

The VQA states that the grapes used to make the ice wine must be harvested after November 15, while the grapes are normally picked every September to October, so the grapes need to be left hanging after ripening to wait for the cold winter to come, allowing natural weathering and freezing to concentrate the sugar and essence. But the annual cold snap doesn’t always arrive as expected, usually delayed for a while on Nov. 15.

-8 ℃: The natural temperature for picking ice grapes must be -8 ℃. In some warm winter years, when the ideal low temperatures do not arrive, hanging fruit for too long can cause grapes to fall off or become infected with mold and rot. However, in extremely cold years, exceptionally strong cold current will bring the temperature down to below -12 ℃, which will cause the frozen grapes to be too hard, or the grape juice and sugar extracted will be too high, which will bring difficulties for crushing and fermentation. So, the production of ice wine is a gamble with nature.

3 a.m.: Harvesting takes place between 3 a.m. and 10 a.m., to ensure timely juicing of grapes frozen at -8 ℃. If you hesitate, the water that forms the ice crystals will melt, and all your previous efforts will be wasted. You can’t squeeze out the thick, pure grape juice. When the right weather is on the way, the winery’s farmers are on standby, ready to harvest the grapes late at night in the freezing cold.

(2) Geography

Niagara is located at latitude 43 degrees North — the world’s recognized “golden zone” for wine production, and some of the world’s top wine regions, such as Toscana in Italy and Provence in France, are in this latitude. Sufficient sunshine time, significant temperature difference between day and night, and less rainfall make the grapes ripe with complex and rich flavor, suitable for the production of high-quality wine.

Soil: The soil of the Niagara Peninsula contains a large number of irregular pebbles due to the influence of the historical glacial lake. The land was submerged in the glacial lake for a long time. When the glacial lake period passed, the land was covered with a layer of permeable sand. Now this land is mainly composed of shale sandstone and sandy soil and gravel, which is very suitable for grape cultivation.

3~ 12km: Ice wine grapes are harvested two to three months later than normal. During this time, proper humidity is required to ensure that the grapes remain fresh without turning into raisins or mildew while being moderately dehydrated. The best ice wineries in Canada are located in Niagara Peninsula, 3~12 kilometers away from the Lake of Ontario, within 3 kilometers, the excessive moisture is easy to cause the mildew of grapes; Within 12 kilometers, due to the lack of water vapor, grapes tend to be dehydrated to dry.

Niagara Bluffs: The 300-meter-high Niagara Bluffs cut across the southern part of the peninsula, causing moderate lake winds from Southern Ontario to flow back over the peninsula and keep out the cold current from the north. This prevents Niagara from being as cold in winter as it is at the same latitude. In the early winter, the grapes will freeze slightly at night and wake up when exposed to the sunshine during the day. During freezing and melting, the pulp of the grapes will be pulsed. During grape pressing, the refined ingredients can be separated out better, thus producing excellent ice wine.

(3) People

VQA: Ontario has established the VQA system, which has set a series of extremely strict management standards for the brewing of ice wine: the temperature of picking and pressing should not exceed -8℃; The picking time must be in the early hours of the night; Grape juice berry sugar content must be above 35 degrees; Residual sugar must reach 125 g/l… Only when this standard is strictly implemented can the wine be certified by VQA, which must be scrupulously enforced by ice wine producers.

Winemaker: Niagara is home to some of the world’s best ice wine makers, such as Karl Kaiser and Sue-Annstaff.

Natural method: The vineyards here mostly adopt organic cultivation. For example, the grapes grown in Pillitteri winery must not use any pesticides or fertilizers. They believe that any unnatural chemical additives will greatly affect the quality of grapes, and the collection of its ice grapes still follows the most traditional manual picking. This is not an approach that can be easily replicated by large-scale commercial production and machine work.

Vidal Blanc

The Vidal Blanc is a white grape that was obtained by crossing Sebel blanc and Ugniblanc, and is native to France. Resistant to drought and cold, salt-tolerant, well-developed root system and sunshine, The Vidal Blanc has very strict requirements on the region, hydrology, climate and soil: the temperature in spring, summer and autumn should be warm enough, and the winter should be cold enough to grow in the region of 38 degrees to 42 degrees north latitude. Mature slowly but steadily, thick skin, easy to reproduce and rich in fruit juice, suitable for making expensive rot wine or ice wine. Although it originated in France, now it is almost extinct in France. Due to its strong resistance to cold, it is widely cultivated in Canada and has become an iconic grape variety in Canada. Vidal Blanc is very adapted to the cold, but the ice wine produced is not rich and delicate aroma, high acid wine, wine taste slightly flat and wine has a thin feeling. The aroma is very intense, often with apricot and honey and another sweet ripe aroma. Taste like sweet fragrance and then turn to fresh delicious feeling. It has good firmness and is the main variety of ice wine.

The Canadian icon-Emily Carr

Emily Carr is one of the most famous painters in Canada history. The Canadian Encyclopedia describes her as a “Canadian icon”. Her profound interpretation of natural scenery and culture in her works earned her the title of “Nature poetess”. She was born in 1871 in Vitoria B.C. when she was young, she studied at in San Francisco in the United States. In 1899, she came to England, went to Westminster School of Art and then to St. Ives artists’ residence. In the end, she came to Hector Academy of Arts in Hertfordshire, but she failed due to severe anemia. She spent eight months in a sanatorium before returning to Canada, and later worked as a newspaper illustrator in Victoria. She was settled in Vancouver in 1905. After that every summer, she went to an Indian village to paint from life and drew a batch of meaningful totem poles. In 1910 she went to study at the Académie Colarossi in Paris, but only in a short time, and then she returned home because of illness. In 1912, she held an exhibition of French period works in Vancouver, which was characterized by the style of Fauvism (It is the earliest painting school of art nouveau symbolism in the 20th century. It is characterized by wild color use and strong visual impact, usually gives people an irrational feeling.) and aroused the interest of audiences and critics. The second year, she was disappointed that the Indian Village landscape exhibition, which was in the same style, did not receive a positive response. So, she went back to Victoria and decided to stop the painting.

Emily Carr – Self-portrait

In 1927 Emily Carr selected 26 paintings for took part in the West Coast Aboriginal art at the National Gallery in Ottawa. Her work was placed in the center of the gallery and was well received by the audience. This is big change because this is her first time met the “Group of Seven” (Group of Seven based on their love for the wild nature of northern Canada, they intended to create a painting style that was different from the Traditional European painting style and truly represented the true Canadian painting style. They use bold and exaggerated techniques to reproduce the unique Canadian natural scenery with varied pictures. The Group of Seven is the first Canadian art group to take the initiative to discover the original beauty of Canada. Their works and spirits encouraged the newcomers and aroused Canadians’ interest and love for their vast land. They are an important spiritual force and part of the growth of Canada as an independent country), and She was greatly encouraged. After this meeting Emily Carr ends 15 years of artistic isolation. It brings her Paintings into its most productive and famous period. In the following summer she made an audacious voyage across the Queen Charlotte Islands, along the Snares and Nass rivers into the Canadian interior. In a batch of paintings from this trip, Carl abandoned his early style altogether and accepted Lawren Harris’s monumental style and boldly generalized forms of inspiration. In 1930 she exhibited with the Group of Seven, and totem poles were exhibited at the Victoria and Seattle Museum of Art. Later, she abandoned the obvious Indian theme, and in paintings like The Great Forest of British Columbia, she represented the rainforest itself with the heavy sculptural feel of a rainy forest. Later, when she stopped traveling and sketching, she also tried to show the stacked timber and curving coast, as well as the cloud-filled effect.

Places should go visit in Vancouver

Since, everyone has to stay at home for a long while, it is time to go out and breath some new air for yourself. This is not only a travel for yourself, also it helps your mental health. It can release the stress that you have during the day. Changing environment is a of the good ways to do it, and using nature element can have more impact. It is really working for me. After two months stay at home and do not have social life, my temper gets very bed. It was like what am I doing? Who am I? Just like life suddenly do not have goals. Lather on after I go visit different places my soul finally came back.

Stanley park is the first place that I visit. It is the most famous park in Vancouver lots of people come visit. Stanley Park Seawall you must go there take a visit. I was biking around the seawall. Some people may use their feet, but I highly recement use biking because you can visit take a full look for the seawall, and also you will not be super tired. A full ocean view is in front of your eyes and the sea wing is gently kissing your chest. From the east side enter and bike around the seawall. At the north side I would suggest restaurants. It is called Prospect point; it has alfresco seating and you can sit there look at the Lions Gate Bridge that connects north Vancouver. In this moment I would order fish and chips. Along the seawall at the west north side you can see Siwash Rock which is 32 million years old. A marker for the Earth. Down to the west side I would also recement a restaurant called Tea house. I love the salmon at there is really worth to try. Inside of Stanley park have Vancouver Aquarium. This is the biggest aquarium in Canada. more than 60,000 charming aquatic animals roam here. Unfortunately, right now the Vancouver Aquarium is temporarily close. There are few places I do not mention I would like you to discover yourself. If you told you everything, it would be no fun for visiting.

Grouse Mountain is the highest mountain in Vancouver. Sometimes people call it the peak of Vancouver. It is only taking 15 minutes to get there from downtown. You can have different activities with different season. In the summer I would go hiking with friends. It is quite challenging for new people because there is only a little flat ground in the mountain. The official recommend is to complete within 2 hours. When you reach the top of mountain there is Grouse Mountain Resort. You have food and get some rest in there. There are so many activities at there no matter what season is. You can take the Grouse Mountain Skyride down to overlook the magnificent views of the Grouse Mountain. Grouse Mountain also famous by skiing. From December to March there are visitors from all over the world became of skiing. Unlike in the past, when there was only one ski run, skiers and snowboarders now have 26 trails to choose from. There are various terrain parks for beginners and snowboarders, as well as night skiing, snowboarding, snowshoe hiking, skating, sledding and other sports. They are Intimate Distance from 0 to 45-centimeter, Personal Distance from 45 to 120-centimeter, Social Distance from 120 to 360-centimeter, Public Distance from 360 to 750-centimeter. The 2-meter distance is fit in social distance, that is why people say keeping social distance. The distance is not only using in social, but also it can help our life for better living. There are lots of examples, but you may not notice. There is always a reason why designer do that.

How does distance effect our life?

Everyone has their comfort zone is like the extend of body and interpersonal communication is only within this limit of the space allows will appear natural. Otherwise, people would be restless. There are many situations we keeping the distance from people automatically. For example, when you walk into an elevator, it is empty inside you will just walk in the middle and waiting. After next level a man walks in and you do not know him, what would you do? You will step back or go near the conner because in your brain would feel your comfort zone going to be offended. And then in next level you meet your friend, he walks in and go near you at this time you would not go to another conner because you know him and he is in personal distance.
In real life, your brain already gives out order before you noticed. This is why sometimes people do not feel good, but could not explaining why.

The customer service agent always leaves a deep impression for service because they had trained for social distance. They never cross the distance and act politely. Same as social communicate, the distance in social communication also need to take care. With in different culture background social distance are different, so it is very important to know their taboo. Otherwise, it could create bigger trouble than you can imagine.
Another case is different restaurants with different design style. One restaurant neat and orderly and the other one is luxury and chaos. I would rather choose the one that is neat and orderly. Because the other restaurant gives me oppressive feeling, it is offence my comfort zone. How the lay out the chair and table make people feel open and free there is a secrete in it, and lots of people had study into it. This is called Human Factors or Ergonomics in another place. Using distance to lay out a practical space. It can Bring interior design into next level. It also become one of the most important elements in modern design. Science housing resource getting tighter.

What is Human Factors?

The definition of human factors is the study of the various factors of anatomy, physiology and psychology in a particular working environment; Study the interaction between man and machine and the environment; The study of how one considers efficiency, health, safety, and comfort at work, in one’s home life, and on holiday.

Why do we use human factors?

The most comment thing is house layout. We use human factors to design the furniture that fits our different requisites. To make sure things serve us, not us serve things. Understand the size of space. What you can do with it and let the space be most useful. This is one of the reasons we use human factors. Use limited space to create a comfortable, safe, and beyond the ideal area. Even the chair that you siting, it is using human factors. It can affect your mind. In the museum the designer will consider human behaver, so they will design the way like one-way travel. Making sure people can visit all the stuff at once. It is amazing that designer play with distance, but the most main point is to serve people and to help people takes less side-effect from different reasons.

In closing, the distance connects human, things, and environment together as a system, so people can use human factors to actively and efficiently control the living environment. Space design by human decision, but space effects human behaver. Study human factors can understand ourself better, and a possibility to away danger avoid people use it affect your feeling.

An Educational TV Series

There is a TV series I had watch 5 to 6 time, and I still keep watching it.
It is called Criminal Minds. This TV series tells the story of BAU, full name Behaver Analysis Unit under the FBI headquarters. In the story, BAU believes after profile the criminal, they can step ahead than the criminal before they start next crime. Finding the regular under the chaos. I am excited how always think of another way out. A view of why smart people smarter than the other.

There are two story line in the TV series. One is BAU investigate the case after local police’s request, and then summarize the hint give our profile for the criminal. Two is BAU’s life experience. It shows us a face that we never know before. What is a FBI agent looks like in real life? I always think in the TV series the most powerless moment is not BAU can not save innocent peoples’ life. It is when the duty calls, they have to show up no matter whenever wherever they. Some of them are a husband who is sorry to the family; a lover who deeply loves their partner; a son who wants to have more time to take care his mother, but when the phone rings they will be on their way.

The reason why I love to watch Criminal Minds is because it shows me both side of humanity. Not to pink brush one side, it just shows me what is it in real life. I biggest thing I learn from Criminal Minds is never underestimate the evil of humanity and crime on little kids. For kids the most damage come from those people you thought you know about them, not from the stranger. And maybe in your mind kids are too young for sexual assault, but in those criminals’ mind they are in the perfect age. It is very important to teach them protect themselves. We can always compliment the beauty of humanity, but please never underestimate evil of humanity.

Whistler Writers Festival 2020

Whistler Writers Festival is sponsored by the Whistler Writers Society. In the festival people share their experience, enjoy reading, listen music and more activities. It since 2002, in the beginning only few authors 20 participants. Right now, it become one of the biggest festivals in Canada. Not only the local author attend, but also there are author from other country. It is a communication platform now.

When I was a kid, I like reading books because it gives space to imagine a place to enter my own world. I feel relax when I reading books. Reading is not just learning knowledge; it is a process for getting experience. I always think story book is a mirror of author because they would put their experience, feeling, and thought into it. It is like a second life for them.

In real life, we facing a lot of stress our mental health become more and more important. The mental health problem is always excise. It just people discover or not.

How to prevent mental health problem

There is no specific answer for prevent mental health problem because people are different and there are a lot of conditions need to be considered. I do believe a health body and self-discipline life style can lower the risk. Our body just like a clock if you fiddle with the pointer there is no way the clock can work normal. There is a condition need to be considered. Some people work at the midnight it does not mean they can not have a regular life. If work at midnight already become regular, the damage to body actually is lower than we thought. It is lower but does not mean there would not be a problem. When we sleep, our body can self adjusting to have a health body. Melatonin helps adjusting our brain to get into deep sleep and extend the time, that is the time when we adjusting. That is why sometime when we wake up still feel very tired and the brain like chaos because we do not have enough deep sleep time. Of course, it will affect out metal health.

In my view, go out and change the environment can help a lot. Even just sit in a library read a book, it helps release stress. Never forget humans are social animals. It is our nature lives together. The environment effect is way powerful than you thought, that’s why people like to hiking. Do not be shiny to take about your stress with friends, there is nothing to be shiny.
